Recipe for Jan Smith's Pumpkin Energy Bars!

Dear Sisters,

As promised, here is the recipe I was talking about at the beginning of our zoom meeting. They’re fabulous! 

 

Many of us are suffering through this pandemic, or other life events, and this is a wonderful treat.

 

Nothing can take away the pain of the personal issues some of our sisters are suffering right now. Energy bars can help in a miniscule way.

Jan’s Pumpkin Energy Bites

Ingredients:


· 1 ¼ cups old-fashioned rolled oats
· ¼ cup ground flaxseed
· 1 Tablespoon chia seeds
· 1 ½ teaspoons ground cinnamon
· ½ teaspoon ground ginger
· ¼ teaspoon ground nutmeg
· 1/8 teaspoon ground cloves
· Pinch of sea salt
· ½ cup creamy almond butter
· ¼ cup pumpkin
· ¼ cup honey
· 1 teaspoon vanilla extract
· ¼ cup mini chocolate chips



Instructions:


· Use stand mixer with paddle blade, or you can do it all by hand with rubber scraper or spoon.
· In a bowl, add oats, flaxseed, chia seeds, cinnamon, ginger nutmeg, cloves, and salt. Mix until combined.
· Add almond butter, pumpkin, honey, and vanilla. Mix thoroughly.
· Stir in chocolate chips.
· Roll into bite size balls or use silicone trays. Freeze.
· This single recipe should make 36-38 balls or cubes in the silicone trays.
· Keeps a week in the refrigerator if you choose, or longer in freezer.

P.S. Thank you, Jill, for dropping some of these by the parsonage for me to enjoy this week of the virtual Convention of International Chapter of the P.E.O. Sisterhood! They are great right out of the freezer. They will fortify me throughout this week of Zooming!
